I remember 5 to 10 years back watching a doc about pandemics . They basically outlined what is happening now and said ground zero would be a live market in China .

I don't agree. Both Wuhan & Lombardy had strange cases of pneumonia dating back to Nov/Dec 2019. Neither would have recorded all cases because of the nature of testing & the asymptomatic cases etc. so if you're arguing about his simple exponential spread model I think you're missing a bunch of real-world aspects. A bunch of countries have had a low number of cases for weeks without massive outbreak or major containment measures.
Tracing the source isn't as simple as just looking at who had the most confirmed cases by the end of January. It's also possible it came from somewhere outide of Italy or China & could be years before it's resolved. The MERS virus is a good example of how origins can change when new data becomes available.
