Watch at 5:20 - I believe that look and action we see is the man grabbing a pen, writing the number and word Joe said on the paper, and putting it into the wallet all in one impressively quick, fluid motion. When he says "slight of hand" he means "something I can do very quickly and in an obscured fashion right in front of you that produces the desired result every time."
