Looks tasty, but sticking them to the wall seems like a pain. Racks of some sort?

I think the reason they stick them to the wall is because it's hot enough to stick and bake, but will pry off evenly when finished.

 

With a rack the pastry will likely bake around the mesh and then rip when removed.

 

Also when you get into arcane cooking you use fewer tools that are more primitive in nature, as communities cooked with what they had that was simple yet effective. Not every smith could fashion a wire rack for example, But they could fashion a knife or a peel. Even the wire net that they used to scoop them could be "Newer" tools releatively speaking than what existed traditionally.

 

The lamb lollipop ones are neat, I haven't seen those before.
